Cooking tips

The Perfect 'Roasties'.
Par boil the potatoes, (we prefer King Edwards or Maris Piper), drain well and fluff up, shake the drained potatoes in the pan, to 'roughen/fluff' up the edges.. Add plenty of Goose fat to a roasting tin and place in a pre-heated oven (220 C / 425 F / Gas Mark 7), for 10 mins. Once the fat is just smoking, carefully add the potato chunks, baste well and place back in the oven for around 45 mins. Turn and baste occassionally to ensure they are golden and crunchy all over.
Place potatoes in a roasting pan and apply Goose fat over the top of them, coating as much of the surface as you can
