Cooking tips

Chunky rounds of fresh oxtail cooked or braised for three hours till the fat is soft and gelatinous and the flesh is falling off the bones.

Cook with carrots onions celery and seasonings.

Let it cool in the fridge for an hour and you will then easily remove any fat set on the surface.
